Vegetarian Stuffed Mushrooms Even Meat Eaters Love


Stuffed mushrooms are a great appetizer for any season.  This recipe is a vegetarian treat even meat lovers will enjoy.

2 packages of 8 oz mushrooms

Olive oil

Sea salt

7-8 stone ground crackers

1/4 cup Parmesan cheese

1/4 cup cream cheese

5 large (pitted) olives

1/4 sauteed Onion and 1 clove of sauteed Garlic

A few Basil leaves (wash and lightly dried)

Two dashes of black pepper

Remove stems and wash mushrooms. Dry in a colander.  Mix Mushroom caps in Olive oil, making sure all mushrooms are nicely oiled.  Lightly mix in Sea salt.  Place oiled Mushroom caps on baking sheet.  Preheat oven at 350 degrees.

In a food processor, put in crackers, sauteed Onions and Garlic, Basil leaves, Olives, and Parmesan cheese.  Ground in a paste.  Mix in cream cheese.

Apply Mushroom filling to each Mushroom cap.  Drizzle each filled Mushroom with Parmesan cheese.  Bake Mushrooms until outer cap appears fully cooked (about 15-20 minutes).
